These are from the book "300 Big & Bold Barbecue & Grilling Recipes"and I just picked a couple that sounded tasty..So here they are:
4 Ripe Avocados, halved & pitted
2 Jalapeno peppers (seeded and finely diced)
1 small red onion (diced)
1/4 cup fresh, chopped Cilantro
The Juice of One lime (to taste)
Prepare hot fire in the grill, and grill avocados, cut side down for 2 to 3 minutes, or until you have good grill marks, then peel and cut into chunks. In a bowl mash them together with the other ingredients and serve immediately!
Maple Ginger Butterflied Pork Chops
For the sauce:
1 clove garlic (minced)
1 tbs minced Ginger root
Half cup pure maple syrup
2tbs Cider Vinegar
4 boneless butterflied Pork chops
Hot fire in grill, and then combine all the ingredients for the chops. Grill the pork 2 min per side, then baste with the sauce, and then grill again till chops are done. Serve remaining sauce on the side. Don't Over grill..
